Karyn is an avid cookie baker, and she recently tested out a new super amazing cookie recipe that is her new favorite cookie recipe!! She received this cookie recipe came from a friend of hers, Jan Schiferl, that runs Schiferl’s WJ Ranch. Their ranch and riding arena hosts lots of events each year, such as concerts, dance lessons, horse riding lessons, the old-fashioned Cowboy Christmas event, group tours and more.
This Danish cookie recipe was in Jan’s latest newsletter. It came from her Dad’s side of the family, who are Danish, and her aunt always made these. Karyn says they are delicious!!!!
Danish Cookies Recipe
- 1 cup flour
- 1/2 tsp soda
- 1/4 tsp salt
- 1 cup softened butter
- 1 cup powdered sugar
- 2 tsp vanilla
- 1 cup oatmeal
- 1 cup chopped pecans or walnuts
There’s a skinny girl who lives inside me that’s trying to get out, but I usually shut her up with cookies!
Preheat oven to 325 degrees. Line baking sheet with parchment paper. Mix dry ingredients in bowl. In separate bowl, mix butter, sugar and vanilla until smooth and creamy. Stir in flour mixture. Gently add oats and nuts and stir. Drop a scant tablesppon of dough on sheet. Bake about 15 minutes or until slightly browned. Let cool and sprinkle with a dusting of powdered sugar. Enjoy!
