No Bake Cookie Recipe

Last night, Tatym wanted me to make “no bake cookies”, but since we recently moved, I haven't found my recipe box yet! Then I remembered I had the recipe on my blog. But that blog post is 7 years old (aka “before Pinterest”) and not easy to find. So I decided to re-share (with a pinnable image) since more and more people are going gluten-free, and this recipe is naturally gluten-free and oh, so good!

No Bake Cookies Recipe


In a saucepan, bring sugar, cocoa, margarine, milk and salt to a rapid boil for one minute.  Add quick cooking oats, peanut butter and vanilla. Mix well. Working quickly, drop by teaspoonfuls (I use a Pampered Chef scoop) onto waxed paper and let cool.

I usually make a double or triple batch because everyone loves these at my house, and they don't last long!

Variation: My friend, Karen Garcia from prefers to use butter instead of margarine and recommends Ghirardelli’s Unsweetened Cocoa (I usually buy Hershey's or Nestle).
