With flu season in full swing, homemade chicken noodle soup is great for soothing sick tummies. Karyn recently made her delicious homemade chicken noodle soup when her son was home sick from school. I have to admit that I have never made homemade chicken noodle soup before, but now that I have Karyn’s recipe, I may have to try it as I know homemade is so much better than from a store bought can. Luckily I have friends who have brought me their own homemade chicken noodle soup in the past when I’ve been sick. It looks like it’s my turn to return the favor!
Homemade Chicken Noodle Soup
- 1 large whole chicken
- 10 to 12 cups of water
- 49-1/2 oz can of Swanson’s chicken broth
- 14 -1/2 oz can of Swanson’s chicken broth
- 1 package of frozen egg noodles
- 1 to 2 lbs baby carrots
- 1/2 to 1 whole bunch of celery including the greens
- 1 small or 1/2 large onion
- salt and pepper to taste
- optional: 1 can of cream of chicken soup
In a large stockpot, place the whole chicken in the bottom, pour the large can of chicken broth over it and add water to completely cover the chicken. Gently boil cover for 45 minutes to one hour, until it starts to fall off the bones.
While the chicken is cooking, prepare the vegetables. Chunk the baby carrots, dice the celery (including the greens), chop the onion. Remove the chicken, set aside to cool. Add the vegetables to the broth and boil covered for 20 to 30 minutes. Add the frozen egg noodles and the small can of chicken broth. Boil uncovered for 20 minutes. Stir often and add water if needed.
While the vegetables and noodles are cooking, de-bone the chicken. Discard the bones and skin. Cut or break the meat into small pieces. If it is a large chicken with a lot of meat, you can save the breasts and use to make chicken salad sandwiches).
Add chicken back into soup when the noodles are done. Add salt and pepper to taste. If you like thicker soup, you can add a can of cream of chicken soup.
