Remember the super cute cupcakes that Karyn made for her kids' Old MacDonald had a farm barnyard birthday party? Well, not only were the cupcakes adorable, but they were delicious, too! And they weren't ordinary cupcakes either; they were jumbo Ho-Ho cupcakes! And she is sharing recipe with us!

Ho-Ho Chocolate Cupcakes Recipe
Bake chocolate cupcakes as directed from cake box mix. Karyn made “jumbo cupcakes” using a jumbo cupcake pan. If you do not have a jumbo cupcake pan, you can use jumbo silicone baking cups or foil jumbo cupcake liners or and place them on a cookie sheet. Tip: you do not want the cupcake liners to touch each other or else they won't hold up their round shape (Karyn learned this lesson by mistake)!
Ho-Ho Cupcakes Filling Ingredients and Directions
- 1 cup sugar
- 1 TBsp water
- 1 cup white Crisco
- 1/2 tsp salt
- 1/2 cup milk
- 1 tsp vanilla
- Beat 5 minutes
- Add 1 cup powdered sugar and mix well.
Use a decorator bag and filling tip (Karyn uses the Pampered Chef Easy Accent Decorator) to fill the cupcakes just until they start to plump. Stop filling before just before the top of the cupcake crack open.
Ho-Ho Cupcakes Frosting Ingredients and Instructions
- 1 cup sugar
- 6 TBsp butter
- 6 TBsp milk
- Boil one minute.
- Add 1 1/2 cups milk chocolate chips
- 1 tsp vanilla
- Frost quickly before frosting sets
Ho-Ho Cupcake Frosting Alternative
Karyn used the chocolate frosting recipe above, but here is an alternative chocolate frosting recipe.
- Melt together:
- 3/4 cup whipping cream
- 1 cup milk chocolate chips
- Cool until thickened
Printable Ho-Ho Cupcake Recipe
Ho-Ho Cupcake Variation: You can bake the chocolate cake mix as a double-layer round cake to make a Ho-Ho Cake! Spread the filling between the layers. Then pour the frosting over the top letting it drizzle down the sides. This is beautiful and delicious if you follow the directions correctly. If not, you get a Pinterest fail, such I did!
