Yesterday, the girls and I started our traditional Christmas baking. The worst part of the “job” is “rolling balls”. First we had to make balls for peanut butter star cookies, then for these peanut butter balls. Next up, Oreo balls!

Chocolate Covered Peanut Butter Balls Recipe
Inside ball ingredients:
- 2 c. peanut butter
- 1/2 c. margarine softened
- 3 c. powdered sugar
- 3 c. Rice Krispies (or generic cereal alternative)
Cream together peanut butter and margarine. Add sugar and cereal. Mix together and form 1″ balls. Cool in fridge or freezer.
Outside covering ingredients:
- 1 (12 oz) pkg semi-sweet chocolate chips (not imitation)
- 1/4 cake paraffin wax (found by canning supplies at the grocery store)
Melt chocolate chips and wax on stove top as the wax will not melt in microwave. Dip balls into the melted mixture and place on wax paper to harden.
Note: the chocolate sets up really fast, so you need to work fast!
Variation: you can substitute chocolate flavored almond bark for the chocolate chips and wax mixture.
