Frog Eye Salad Recipe

This Frog Eye Salad recipe is a traditional family favorite. My Grandma made Frog Eye Salad for every family gathering when I was a child.

Frog Eye Salad


  • 16 oz box of Acini Di Pepe
  • 1 egg
  • 1/2 cup sugar
  • 1 Tbsp flour
  • 1/4 tsp salt
  • 16 oz crushed pineapple, drain but reserve juice
  • 16 oz mandarin oranges, drained
  • 2 cups colored mini marshmallows
  • 12 oz Cool Whip, thawed


  1. Cook pasta according to package directions; drain.
  2. In heavy saucepan, beat egg until foamy. Stir in sugar, flour, salt and reserved pineapple juice. Cook over low heat until thickened and bubbly.
  3. In a large bowl, combine pasta and egg mixture. Chill for 1 hour.
  4. Stir in pineapple, mandarin oranges and marshmallows. Gently fold in Cool Whip. Cover and chill thoroughly or overnight.
