I kept seeing a Peanut Butter Oatmeal Dream Bars recipe being passed around Facebook, and when I daughter said she was hungry for something sweet today after school, I thought these would be perfect! But who keeps Reese's candy bars stocked in their pantries? Certainly, not us! So I improvised, and here's what we made:
Peanut Butter Oatmeal Dream Bars
- 1 cup melted margarine
- 1 cup brown sugar
- 1 tsp baking soda
- 2 1/4 cups quick cooking oatmeal
- 1 1/2 cups flour
- 1 tsp salt
- 1/2 cup creamy peanut butter
- 1 can sweetened condensed milk
- 1 cup milk chocolate chips
Pre-heat oven to 350 degrees.
Mix together margarine, sugar, soda, oatmeal, flour and salt. Set aside about one cup of mixture and press the rest into a greased 9×13 pan. Bake for 10 minutes.
Mix together peanut butter and sweetened condensed milk and spread over baked crust. (I actually microwaved this for 30 seconds so it made it easy to pour/spread). Then evenly sprinkle rest of original mixture over that. Bake for another 12-15 minutes.
Sprinkle chocolate chips and bake another 5 minutes. (I happened to actually have milk chocolate chips on hand because I sent the kids to the store earlier for chocolate chips, not mentioning that I wanted semi-sweet.) Since I didn't have the peanut butter cups to add like the other recipe called for, I wish I would've added more chocolate chips, maybe even some semi-sweet ones, because I think it could've used a tad more chocolate. Or maybe that's just me. 🙂
