Rhubarb Custard Pie Recipe

Happy Pi Day (3.14)!
My son thought we needed to bake a pie today to celebrate Pi day. He thought that was so funny! He is 8 years old. We chose Rhubarb Custard Pie, one of my husband’s favorite recipes. His mother taught me how to make this amazing pie. Enjoy!

Rhubarb Custard Pie

Ingredients

  • 2 eggs, lightly beaten
  • 1 1/2 cups sugar
  • 3 Tbsp flour
  • 3 cups rhubarb
  • 1 tsp almond extract
  • Crumb topping:
  • 1/2 cup white sugar
  • 1/2 cup flour
  • 5 Tbsp butter, softened

Instructions

  1. In a large mixing bowl, combine eggs, sugar, flour, rhubarb and almond extract.
  2. Pour into an unbaked pie crust.
  3. In a small mixing bowl, combine topping ingredients with a fork until crumbly.
  4. Sprinkle crumb topping over pie.
  5. Bake at 350 for 1 hour or until lightly browned.
  6. Serve warm with ice cream.
